In the high, misty mountains of Chelbesa, Gedeb, hundreds of small family farms deliver their ripest cherries to the Ephtah washing station at 2,150–2,200 metres. Managed directly by Ephtah Specialty Coffee, the station employs 17 permanent staff and up to 150 seasonal workers each harvest.
Only the best cherries are selected by floatation are pulped, then fermented dry in tanks without water, in a precise and controlled method that preserves clarity and sweetness. The parchment then dries slowly on 150 raised beds for 10–15 days under the bright Gedeb sun.
Ephtah places special emphasis on fair pay for producers and elevating women’s vital role in the community. Every step reflects a quiet dedication to quality, transparency, and lasting positive impact in this celebrated corner of Yirgacheffe.
