Efrain Carhuallocllo Salvador farms four hectares in the village of El Corazón in Chirinos, northern Peru. Widely regarded as one of the country’s most progressive producers, he approaches both his farm and wet mill with an uncommon level of precision. Every stage, from picking through to drying, is handled with care and intention, reflecting a deep understanding of how small decisions shape the final cup.
In Peru’s inaugural Cup of Excellence competition, Efrain placed second. Since then, he has accumulated numerous local and national awards, cementing his reputation as one of Peru’s most highly recognised producers.
On his farm, he cultivates yellow and red Caturra alongside Geisha. After selective harvesting, the cherries undergo a 24 hour fermentation before washing. The parchment is then dried slowly and evenly over approximately 25 days. This extended drying period promotes stability and longevity, preserving clarity and structure long after the coffee has left the farm.
Efrain’s coffees are defined by this balance of innovation and discipline, expressive yet composed, with a clarity that speaks directly to the care invested at origin.
